Are sweeteners such as Xylitol and Erythritol safe to use?

Please avoid these artificial sweeteners. Alcohol sugars are identified by the “ol” at the end of the name. It has not been researched enough, and most of the information out there is by the folks who make it. Even those that are certified organic (mainly because most of the material is alcohol which is not required to be organic to be called organic) should be avoided. Alcohol sugars have been shown to increase gut stress, and because it doesn't have many calories but still has sweetness, it stimulates the brain and nervous system via the taste buds, and the body responds to it in an unnatural and potentially harmful way (as if it were regular white sugar).

Alcohol sugars are also usually made from corn, which many people allergic to.

Use honey -- it's real.
